I used Empress 1908 Gin which is a spirit from Canada that’s micro-distilled in copper-pot stills using juniper, rose, coriander seed, grapefruit peel, ginger root, cinnamon bark, butterfly pea blossoms. Fresh mint is muddled with maple syrup, blended with watermelon, strained, then mixed with a touch of lime juice. It’s topped with a good amount of Prosecco but can easily be swapped for tequila or vodka.
I love this drink because you can easily make the watermelon juice ahead of time. You can even mix the Prosecco in with the juice and freeze it for later for a slushy.
