Watermelon Mint Prosecco Spritz

If a cocktail could taste like summer, it would be this Watermelon Mint Spritz. It’s so refreshing and especially perfect for warm weekend afternoons. Fresh mint is muddled with maple syrup, blended with watermelon, strained, then mixed with a touch of lime juice. It’s topped with a good amount of Prosecco but can easily be swapped for tequila or vodka.

I love this drink because you can easily make the watermelon juice ahead of time. You can even mix the Prosecco in with the juice and freeze it for later for a slushy.

Watermelon Mint Prosecco Spritz

Makes 2 cocktails

Ingredients

  • 1/4 cup fresh mint leaves

  • 2 teaspoons maple syrup

  • 2 cups cubed watermelon (works best if the watermelon is cold)

  • 2 tablespoons fresh lime juice

  • Prosecco

Directions

  1. Muddle the mint leaves with the maple syrup.

  2. Add to a blender with the cubed watermelon and blend for about 10 seconds.

  3. Strain into a pitcher, pressing the mixture to get as much watermelon juice as you can. Mix in the lime juice.

  4. Place in the freezer for 30 minutes to get it nice and cold. (Or you can serve it with ice)

  5. Fill your serving cups halfway with the watermelon juice then top with prosecco (1-1 ratio).

Recipe Notes:

  • Make it a slushy by adding the prosecco to the pitcher and freezing it for about four hours. (1-1 ratio)

  • Not a fan of prosecco? This cocktail is just as good with tequila or vodka.
