Cauliflower, Lime & White Bean Soup
This easy and healthy soup has a vegetable broth and lime base and loaded with cauliflower, white beans, and kale. It’s the perfect soup for a cold night, but the refreshing lime makes it great all year long!
Cauliflower, Lime & White Bean Soup
Ingredients
Olive oil
2 large shallots, chopped
2 garlic cloves, minced
1 (4oz) can diced green chiles
1 large head (or 2 small heads) cauliflower, chopped into pieces
salt and pepper to taste
1/2 tsp red chili flakes
1 tsp cumin
6 cups vegetable broth using Better Than Boullion
2 cans northern white beans
2 cups chopped kale (any stems/stalks removed)
3 limes
Toppings such as avocado and cilantro (optional)
Directions
Heat some olive oil in a large pot over medium heat. Add the chopped shallots and minced garlic. Sauté for a couple minutes.
Add the diced green chiles, chopped cauliflower, salt, pepper, red chill flakes, and cumin. Sauté for a couple minutes.
Add the vegetable broth and white beans. Bring to a boil then reduce heat to low.
Add the chopped kale. Cook covered on low for about 20 minutes, until cauliflower is done.
Remove from heat, and add the juice from the limes and mix.
Top with your favorite toppings, like avocado and cilantro.
