Pomegranate Rosemary Gin Sparkler
Makes 1 cocktail
Ingredients
1/4 cup cane sugar
2 sprigs rosemary
2 ounces pomegranate juice
1-2 ounces gin
1 tsp fresh lime juice
Sparkling water
Fresh pomegranate arils for garnish (optional)
Directions
Make the rosemary simple syrup by combining 1/3 cup water, the sugar and 1 sprig of rosemary in a small pot. Bring to a boil, reduce heat to low and cook for a couple of minutes until the sugar has dissolved and the water becomes slightly green. Remove from heat and let cool.
Add crushed ice to a cup. Add the pomegranate juice, gin and lime juice. Add 1-2 tablespoons (or more for even sweeter) of the rosemary simple syrup. Top with sparkling water and garnish with a sprig of rosemary and pomegranate arils.
