Watermelon, Feta, Cucumber & Avocado Salad

Watermelon, Feta, Cucumber & Avocado Salad with a Lemon Zest Olive Oil Dressing

Ingredients

• 1 small watermelon, cubed

• 2 cucumbers, cubed

• 2 avocados, cubed

• 2 blocks feta cheese, cubed

• Handful of fresh basil for garnish

For the Lemon Zest Olive Oil Dressing:

• 1/4 cup extra virgin olive oil

• 2 tbsp fresh lemon juice

• 1 tbsp lemon zest

• 1 tbsp finely chopped fresh basil

• 1/4 tsp course salt

• 1/4 tsp pepper

Directions

1. Arrange cubed watermelon, cucumber, avocado and feta on a large dish.

2. Whisk together the oil, lemon juice, zest, chopped basil, salt and pepper.

3. Drizzle dressing over salad and garnish with fresh basil.
