Spicy Pineapple Cucumber Margarita

Muddled cucumber and jalapeño slices combine with pineapple juice, fresh lime juice, and tequila for this refreshing margarita. Strain it over crushed ice for a slushy consistency that you’ll love. It’s a touch sweet, spicy, and tart. It’s super easy to make but tastes fancy. Not into spicy? Simply skip the jalapeños.

Spicy Pineapple Cucumber Margarita

Makes 1 margarita

For the rim:

  • 1 teaspoon salt

  • 1/2 teaspoon sugar

  • 1/2 teaspoon chili powder

  • 1 lime wedge

For the margarita:

  • 6 cucumber slices (plus more for garnish)

  • 6 jalapeño slices

  • 1/3 cup pineapple juice

  • 1/4 cup fresh lime juice

  • 1 teaspoon maple syrup, honey, or agave

  • 2 ounces (1/4 cup) silver tequila

  • Cilantro for garnish (optional)

Directions

  1. Make the chili rim by combining the salt, sugar, and chili powder on a small plate.

  2. Rub the lime wedge around the rim of your serving glass, then dip in the chili mixture. Fill the glass with ice. Crushed ice is pictured here, and especially good. It’s a cross between on the rocks and blended. Simply blend the ice in a blender for a couple of seconds.

  3. Muddle the cucumber and jalapeño slices in a cocktail shaker or jar. If you don’t have a muddler, use the end of a wooden spoon.

  4. Add the pineapple juice, lime juice, maple syrup (or sweetener of choice), and tequila. Shake vigorously for at least 15 seconds.

  5. Strain into your glasses. Add a few cucumber slices and a sprig of cilantro to garnish. Enjoy!
