Snap Pea, Green Bean & Farro Salad
This salad is simple and fresh but hearty with the farro. Farro has a slight nutty flavor and is chewier in texture, compared to brown rice. It’s definitely my favorite grain, especially for salads.
1 cup farro
1 1/2 cups vegetable broth
8oz snap peas, sliced in half lengthwise
5oz green beans, sliced in half lengthwise
8 oz cherry tomatoes, sliced in half
3 tbsp balsamic vinegar
3 tbsp olive oil
1 tbsp fresh lemon juice
1/2 tsp lemon zest
1/2 tsp honey
1/4 cup chopped basil
salt and pepper to taste
To a medium pot over high heat, add the farro and vegetable broth and a little bit of olive oil. Bring to a boil, reduce heat to low, cover and cook for 10 minutes. Let cool.
Meanwhile, add the remaining ingredients to a large serving bowl. Once the farro has cooled, add it to the bowl and toss everything together.
