Roasted Corn & Cauliflower Burrito Bowl with Cilantro Lime Rice

This burrito bowl is one of my go-to meals when I’m feeling lazy and just want something fast. I usually have all of the ingredients on hand which is super convenient. Cauliflower, frozen corn, and onions are roasted with olive oil and spices then paired beans and a buttery cilantro and lime rice. SO easy. Not a fan of cauliflower or corn, swap with your favorite veggies. Mini sweet bell peppers work really well too!

Roasted Corn & Cauliflower Burrito Bowl with Cilantro Lime Rice

Ingredients

  • 1 head cauliflower  

  • 1 red onion 

  • 2 cups frozen corn 

  • 1/4 cup olive oil

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • 1 teaspoon chili powder

  • 1/2 teaspoon salt

  • 1 (15-ounce) can black beans

For the Cilantro Lime Rice

  • 2 cups rice (I like to use Calrose rice)

  • 1 tablespoon salted butter

  • 1/3 cup fresh lime juice

  • 1/3 cup chopped cilantro leaves

Directions

  1. Preheat oven to 375°F.

  2. Roughly chop the cauliflower and red onion into bite-sized pieces.

  3. Add the cauliflower, red onion, frozen corn, olive oil, and spices to a large baking sheet.

  4. Mix using your hands, coating everything in the oil and spices. Spread out in a somewhat even layer.

  5. Place in the oven and bake for about 30 minutes, until the cauliflower is done.

  6. Meanwhile, cook your rice according to package instructions. Once done, fluff with a fork then mix in the butter. Set aside.

  7. Heat your beans and set aside.

  8. Once you are ready to serve, add the lime juice and cilantro to the rice and mix.

  9. Assemble your bowl with the rice, veggies, beans, and toppings of choice.
