Chocolate Peanut Butter Coconut Bars

Calling all chocolate peanut butter fans! These no-bake creamy chocolate peanut butter coconut bars are the easiest dessert but they taste amazing. Peanut butter and sweetened coconut flakes are mixed together and topped with a layer of soft chocolate. These melt-in-your-mouth bars are seriously amazing!

Chocolate Peanut Butter Coconut Bars

Ingredients

Makes 16 bars

  • 1 cup peanut butter

  • 1 (7oz) bag sweetened coconut flakes 

  • ½ tsp cinnamon

  • ½ tsp salt 

  • 2 cups semi-sweet chocolate chips 

  • ⅓ cup milk

Directions

  1. Line an 8x8 inch baking dish with parchment or wax paper. Set aside.

  2. In a medium bowl, combine the peanut butter, coconut flakes, cinnamon, and salt.

  3. Add the mixture to the prepared pan and spread out in an even layer. Place in the freezer.

  4. In a double boiler, melt the chocolate chips with the oat milk, stirring often until smooth and creamy. (Or melt carefully in the microwave - microwaving in 15-second intervals, stirring in between each interval)

  5. Remove the pan from the freezer and pour the melted chocolate over the mixture and spread out in an even layer.

  6. Freeze for about 20 minutes until chocolate is set enough to cut.

  7. Cut into 16 squares and let thaw for a couple of minutes before serving.

Store covered in the freezer.
