5 medium tomatoes, quartered
2 large bell peppers, sliced
1 large red onion, cut into thick slices
12 oz French green beans, cut in half
3 tbsp Worcestershire sauce
1/4 cup balsamic vinegar
3 tbsp soy sauce
1 tbsp brown sugar
For the Aji Verde (Green Sauce):
4 large garlic cloves
1/2 cup mayonnaise
1/2 cup cilantro leaves, packed
2 jalapeños, seeds removed
1/2 cup Cotija cheese
1 tbsp, plus 2 tsp fresh lime juice
If serving with rice, make your rice.
Bake the frozen French fries according to package instructions.
Make the Aji Verde: In a food processor or powerful blender, add the garlic, mayonnaise, cilantro, jalapeños, Cotija and lime juice. Blend for a minute or so until creamy. Set aside.
Heat a couple tablespoons of olive oil in a large pan over high heat. Add the tomatoes, bell peppers, red onion and green beans. Sauté for about five minutes. Next, add the Worcestershire sauce, balsamic vinegar, soy sauce and brown sugar. Sauté for another five minutes, then reduce heat to low and let simmer until the veggies soak up most of the liquid.
Once the French fries are done, add them to the pan and mix to coat.
Serve with rice and drizzle the Aji Verde over everything!
