I’m always craving a little treat after dinner, especially something involving chocolate and peanut butter. My solution: Having these in my freezer at all times. They’re incredibly easy to make. All it takes is combining peanut butter, maple syrup, coconut, oats and chocolate chips, forming into balls, freezing for a bit, then dipping in chocolate.
Chocolate Dipped Peanut Butter Coconut Oat Bites
Ingredients
1 cup peanut butter
1/4 cup maple syrup
1/3 cup mini chocolate chips
1/3 cup unsweetened coconut flakes
1/4 cup gluten free rolled oats
For the dipping chocolate:
½ cup chocolate chips
1 tbsp coconut oil
Directions
Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
In a large bowl, mix together the peanut butter and maple syrup until creamy. Add the mini chocolate chips (1/3 cup), coconut flakes and oats and mix until combined.
Using a cookie dough scoop, or a spoon, place the dough balls on the sheet.
Place is freezer for 30 minutes.
Meanwhile, in a medium microwave safe bowl, combine the ½ cup chocolate chips and coconut oil. Microwave in 15 seconds intervals, stirring in between each interval, until chocolate has melted.
Remove the dough balls from the freezer and dip half (or completely if you prefer) in the melted chocolate. Place back on the sheet and freeze for a couple more minutes until the chocolate hardens.
Serve immediately, or keep in a covered container in freezer until ready to enjoy.
