Cookie Dough Bites

If you’re a raw cookie dough lover, these are for you! Made with cashew butter, maple syrup, oats, almond flour, and chocolate chips, these taste just like oatmeal chocolate chip cookie dough. They’re healthy too! I love keeping a batch in the fridge to satisfy my sweet tooth.

Cookie Dough Bites

Makes 12 cookie dough bites

Ingredients

  • 1/2 cup creamy cashew butter

  • 2 tablespoons maple syrup

  • 1/4 teaspoon salt

  • 1/4 teaspoon cinnamon

  • 1/2 teaspoon vanilla extract

  • 1/4 cup quick-cooking oats

  • 1/3 cup almond flour (not almond meal)

  • 1/4 cup mini chocolate chips

Optional Toppings:

  • Chia Seeds

  • Hemp Seeds

  • Shredded Coconut

  • Rose Petals

  • Dried raspberries

  • Chopped nuts

 Directions

  1. In a bowl, combine the cashew butter, salt, cinnamon, vanilla, and maple syrup. Mix until creamy. 

  2. Add the oats, flour, and chocolate chips. Mix until combined.  

  3. Form into 10-12 balls using your hands or a 1 tablespoon cookie scoop. 

  4. Optional: Top with your favorite topping. Or roll the balls in the topping of your choice until completely coated.

  5. Enjoy!

Recipe Notes:

  • Store in a covered container in the fridge

  • Cashew butter is key is achieving the cookie dough flavor. It’s milder in flavor than peanut or almond butter.

  • Almond flour is preferred over almond meal. The difference? Almond flour is finer and is made from blanched almonds, while almond meal is made from raw unpeeled almonds.
