Vegetable Ribbon Salad with a Blood Orange Dressing
Ingredients
4 large carrots
1/2 zucchini
1/2 cucumber
1 handful of green beans
1/2 red onion
3 tbsp olive oil
2 tbsp lemon juice
4 tbsp blood orange juice
1 tsp blood orange zest
salt and pepper to taste
1 avocado
Directions
Using a peeler, ribbon the carrots, cucumber and zucchini. Place in a large bowl.
Thinly slice the red onion and green beans.
Add the onion and green beans to the vegetable ribbons.
In a small bowl, whisk the olive oil, lemon juice, blood orange juice, zest, salt and pepper.
Add the dressing to the vegetables and allow the flavors to mingle for at least ten minutes.
Top with avocado.
