Peruvian Veggie Saltado with Aji Verde

This Peruvian-inspired dish is so flavorful and delicious. Sauté vegetables in a delicious sauce, toss in some French fries and serve with white rice. This dish isn’t complete without the Aji Verde, a green sauce made with garlic, cilantro, jalapeño, lime and mayo (or avocado!). French fries for dinner? Yes, please. This meal will not disappoint.

Peruvian Veggie Saltado with Aji Verde (Green Sauce)

Serves 4

Ingredients

  • White rice (optional)

  • 1 bag frozen French fries

  • 5 medium tomatoes, quartered

  • 2 large bell peppers, sliced

  • 1 large red onion, cut into thick slices

  • 12 oz French green beans, cut in half

  • 3 tbsp Worcestershire sauce 

  • 1/4 cup balsamic vinegar

  • 3 tbsp soy sauce

  • 1 tbsp brown sugar  

For the Aji Verde (Green Sauce):

  • 4 large garlic cloves

  • 1/2 cup mayonnaise (or 1 avocado)

  • 1/2 cup chopped cilantro leaves, packed 

  • 2 jalapeños, seeds removed 

  • 1 tbsp, plus 2 tsp fresh lime juice

  • 1/2 cup Cotija cheese (optional)

Directions

  1. If serving with rice, make your rice.

  2. Bake the frozen French fries according to package instructions. 

  3. Make the Aji Verde: In a food processor or powerful blender, add the garlic, mayonnaise, cilantro, jalapeños, Cotija and lime juice. Blend for a minute or so until creamy. Set aside. 

  4. Heat a couple tablespoons of olive oil in a large pan over high heat. Add the tomatoes, bell peppers, red onion and green beans. Sauté for about five minutes. Next, add the Worcestershire sauce, balsamic vinegar, soy sauce and brown sugar. Sauté for another five minutes, then reduce heat to low and let simmer until the veggies soak up most of the liquid.

  5. Once the French fries are done, add them to the pan and mix to coat.

  6. Serve with rice and drizzle the Aji Verde over everything!
