Coconut Kiwi Chia Pudding

Ingredients: 

Serves 2

  • 1/4 cup chia seeds
  • 1 cup canned coconut milk
  • 1/2 cup water
  • 2 tsp vanilla extract
  • 1 tsp honey
  • 1/2 tsp blood orange zest, plus more for garnish
  • 1 kiwi, sliced for the topping

Directions:

  1. In a medium bowl, combine the chia seeds, coconut milk, water, vanilla, honey and orange zest.
  2. Cover and refrigerate for at least two hours. Serve with kiwi slices and enjoy!
