One Pan Pasta

Dinner in about 20 minutes? And all in one pan? Say hello to the easiest (and most delicious) pasta recipe. It’s simple, yet so flavorful. Fresh cherry tomatoes, lots of garlic, sweet sun-dried tomatoes, a splash of balsamic, lemon juice, and kale. Bucatini is the best kind of pasta to use here because the hollow center soaks up all of the sauce. The key ingredient here is the chopped sun-dried tomatoes. You’ll definitely want to get the kind in a jar soaked in oil. They bring so much flavor.

All you need is a large, somewhat shallow pan with straight sides (something similar to this). Add the ingredients, cook it for about 15 minutes and there you have it: a one pan wonder.

One Pan Pasta

Ingredients

  • 1 box Bucatini pasta

  • 4 1/2 cups water  

  • 1/4 cup extra virgin olive oil 

  • 1/4 cup chopped sun-dried tomatoes (For the most flavor, get the kind in a jar soaked in oil)

  • 16 oz cherry tomatoes, halved 

  • 5 garlic cloves, chopped

  • 1 tbsp lemon juice (about half a lemon)

  • 1 tbsp balsamic vinegar

  • 1/2 tsp crushed red pepper flakes

  • 1 tsp salt

  • 1 tsp pepper 

  • 1 bunch of kale

  • Parmesan cheese for topping

Directions

  1. To a large, somewhat shallow pan with straight sides, add all of the ingredients except for the kale. Cover with a lid and bring to a boil.

  2. Once boiling, remove lid and continue to boil for 5 minutes.

  3. Meanwhile, chop the kale into bite-sized pieces, discarding the stalks and thick stems.

  4. Add the kale to the pan, cover, and reduce heat to low. Cook for 10 minutes, stirring every once in awhile to prevent sticking, until noodles are al dente.

  5. Serve with parmesan cheese.
